  • It's a cheat focaccia bread with a braised portobello mushroom.

  • So first, let's make the focaccia, which is really the co star of this show.
  • I actually came up with this idea this morning after watching my friend Emma's Goodies make a homemade focaccia but I wanted to make this quick so I'm gonna cheat.
  • I just ran to the store and grabbed a pizza dough.
  • I know this isn't the same thing and it's not gonna be authentic focaccia but it will still come out pretty good.
  • It's cold but it has some bubbles in it which is good so I'm going to gently toss this into a well oiled baking dish, cover it and toss it into my warm oven for about forty minutes to rise.
  • Now for the mushrooms, we're going to get started on them now because we're going to allow these to go for just most of the day.
  • I'm actually going to wash these mushrooms, which is totally okay, and we're going to be boiling them.
  • Now, I did a whole video on boiling mushrooms.
  • This one's going to be a little bit different because we're going to be boiling it in like a flavoring broth.
  • I'm going to get a pot of salted water over a high heat and I'm going to add about a quarter cup of red wine vinegar, quarter cup of soy sauce, a pinch of mushroom seasoning, which if you don't have this, you can totally use M S G. And I'm also going to be using some yeast extract.
  • This is like powdered yeast extract.
  • If you don't have this or can't find this, you can totally use Marmite or Vegemite.
  • Either one of those works really well.
  • A lot of times you can find those in the import section of the grocery store.
  • Now I'm gonna add both of my portobello mushrooms, cover, turn the heat on low, and I'm gonna let these simmer for just most of the day while we're baking our bread.
  • Now, speaking of the bread, it's risen, it's looking pretty good.
  • Now, at this point, I'm just gonna kinda add a little bit more olive oil, spread it around the bottom of the pan, and I'm gonna cover it, toss it back in the oven, probably another thirty, forty minutes.

  • Now at this point, the dough is done resting.
  • I'm going to get the toppings ready, which is just going to be some sliced jalapenos and a bit of rosemary.
  • I'm going to toss those into a little bowl, cover with some oil and a little bit of salt.
  • Shake those up and make sure they're all nice and oiled up because this is going to go in a hot oven and we don't want them to burn.
  • Now, let's pull the dough out of the oven, preheat it for three hundred seventy five degrees on a convection setting if you have it.
  • I'm going to carefully redimple the dough.
  • I don't want to pop the bubbles like Emma said in her video.
  • Add a bit more olive oil and then top off with those toppings.
  • Now, this is looking pretty awesome.
  • The oven is ready to roll.
  • Let's toss this back in and finish up the mushrooms.
  • The mushrooms have been in their broth pretty much most of the day on like a low setting, so they've been able to really take in this flavor, and they're fully cooked at this point.
  • But I kind of want to give them a little bit of a sear, so I'm going to grab two cast iron pans, throw them over a medium high heat, and we're going to be doing the Derek Sarno method.
  • Now, I'm just going to toss these into the well oiled pan, season with a bit of garlic powder, onion powder, and black pepper, and then press with the other pan.
  • That's going to press these down kind of flat and give them like a nice sear on both sides, but I'm going to continue flipping throughout.
  • So while these are cooking, I actually want to prep up some like jalapeno jam.
  • So we're just going to chop up some jalapenos pretty fine, toss them into a nonstick skillet with a bit of oil and a little bit of salt and let them cook down until they're nice and soft.
  • Then I'm just going to toss in a big tablespoon of like a fig jam.
  • I think that's going to be pretty good.
  • We're going to let that cook for just a moment, transfer it over to a bowl to kind of cool down.
  • Now our fake focaccia is ready.
  • This looks amazing.
  • Now I pulled it out of the oven, give a little pinch of salt onto the top and let it rest for a little bit just to kind of cool down.
  • I'm going to spread the jalapeno jam across the bottom.
  • Now I'm going to use a serrated knife, cut out a sandwich sized slice of this.
  • You can see how nice this came out.
  • I mean, it's not as good as focaccia, but you know, it's going to be good.
  • We're going to cut this in half to make our sandwich.
  • I'm going to start with the jalapeno jam, spread across the bottom, top on these mushrooms onto the top.
  • We're going to add a few dollops of this new Philadelphia plant based cream cheese.
  • Now I gave this a try and did a little taste test over on my Instagram.
  • It came out pretty good.
  • Now, we're going to top this off with some leafy arugula and then finish with a few cracks of black pepper, some sea salt and a little white balsamic.
  • Now, let's top this off.
  • This looks amazing.
  • It's rich, spicy, has some fattiness to it, a little tart.
  • It is the best of all flavors.
  • Now, I'm going to say right now that this is going to be amazing.
