Peaches are native to China, where they were domesticated, by some estimates, as early as six thousand B.C.

That's incredible, because it's twenty twenty three, and we still haven't really figured out how to domesticate raccoons.

Sure, you see one here or there on the internet, but it's not like a raccoon in every house the way it should be.

Anyway, it's long enough ago for the Chinese to have learned a vast amount of information about peaches and to catalog many hundreds of cultivars.

Peaches are mentioned in ancient Chinese writings, and they're still growing strong with peach love today, producing over sixteen million metric tons last year.

While we don't grow nearly that many peaches here in the U.S., we do alright.

The top state producers are California, South Carolina, Georgia, and New Jersey.

My favorite way to eat a peach is out of hand standing over the kitchen sink.

If I bought that peach at a roadside stand in South Carolina along with a bag of boiled peanuts, I'm a very happy Dan.

Because you see, the peach is my favorite fruit.

I love the aroma and flavor of the peach, both delicate and distinct.

I love checking the peaches on my counter daily during the summer and choosing the perfect one to eat right then and there.

And the texture,

Man, the texture.

I don't think we have a good word for it in English, but we should.

That combination of gentle structure that quietly crunches and releases juices is just unbeatable.

There are a few different ways to categorize peaches, and one is based on their pit.

We have clingstone and freestone.

In clingstone peaches, the flesh holds tightly to the peach pit, where in freestone peaches, it gives up the pit easily.

Freestone peaches are ideal when you're doing anything other than eating out of hand, because they are much easier to prep.

Another way to categorize them is by whether they are melting flesh or non melting flesh.

I swear I'm not making this up.

Melting flesh peaches.

Sounds like an actual horror movie.

But what it basically means is that melting fleshers soften more dramatically during ripening.

That generally means they need to be picked earlier in their ripening process in order to survive shipping.

You can also look at them based on flesh color.

White flesh cultivars are most popular in China, whereas in the U.S., we tend to grow more yellow flesh varieties.

Red flesh varieties also exist, but are more of a niche market, at least locally.

Is there a big difference between white and yellow?

We did a taste test at Cook's Illustrated of what's available stateside and found that white varieties across the board were much lower in acidity.

And they also tended to soften a lot more during cooking and baking applications.

So they are ideal for eating out of hand if you want less acid and more pure sweetness.

But intrinsically, flesh color and acid level are independent variables.

Now I grew up with high acid yellow flesh peaches, and I love that balance of sweet and tart.

Now, if you're more of a nectarine person than a peach person, and you really wish that this was a nectarine video instead, rest assured that this is a nectarine video.

Both are peaches.

Nectarines lack that fuzzy skin and show differences in size, flavor, and sugar and acid content.

Okay, so before we get into how to prep and cook peaches, I wanna talk about eating peaches out of hand.

Because at the end of the day, this is my favorite way to enjoy them.

But it takes some real technique.

The perfect peach is so juicy that you need to perfect a bite slurp maneuver in order to eat it.

I'll explain by using my own body for science.

The bite slash slurp, or burp...

The blurp, as we call it, is performed by pulling in while biting to ensure every drop of juice is captured.

Blurping ain't easy, hence the blurp stance, a.k.a.

the blance.

If you eat standing straight up, you will get juiced.

For the blance, you lean the upper body forward while keeping your lower body planted.

Now, if we freeze frame on me blurping in my blance, we can look at the potential angle of juice drip, also known as the Pangol Jupe, or POJ for short.

As you can see, the POJ here shows that any juice that escapes my blurp will land well ahead of my brand new sneakers.

And yes, they do make me go very fast and jump very high.

Alright, let's head to the kitchen.

There are a lot of interesting methods floating around on the world wide web for how to get the pit out of the peach.

Let's take a look at all of them.

First, we'll slice from stem to tip and open up the peach.

From here, I can use a paring knife to scrape around the pit and remove it.

Not too bad, and that's how I've done it for most of my life.

It's also the best bet when working with clingstones.

But now let's slice the peach along the equator.

We'll take the top off, and we see this nice piece of the pit sticking out of the fruit.

Now I can just use my fingers to wiggle it back and forth and pop it out.

I find this easier than the previous method.

It's my go to for free stones.

But you've probably also seen people using pliers to rip the pit out, and we tested it, and it does work.

Just make sure you use clean pliers like this, insert, grab, and pull.

Again, you'll ideally have free stones for this.

Sometimes recipes will tell you to peel peaches.

An easy way to do that if you have a lot of peaches is a quick dunk in boiling water and then into an ice bath.

If you make a little X on the tip of the peach before you do, you'll have a nice little handle to pull off the flesh.

But sometimes I like to peel the peach even if I'm eating it out of hand.

And the reason is there's no obscuring the beautiful flesh with the texture of the skin.

And with some peaches, you can peel the skin off just like you would a sticker on a new TV.

Finally, if you're working with firmer peaches for a specific recipe, you can actually peel them with a vegetable peeler.

Okay, we are prepped.

Let's cook.

Peaches can go sweet or savory, and during high season, I think you just have to do both.

One miracle of nature is that peach season and tomato season line right up, and they pair so well together, particularly in this grilled peach, tomato, and burrata salad.

For this recipe, I am using beautiful high acid yellow flesh peaches.

They will hold up better during grilling and that acidity adds brightness to the salad.

They are halved and pitted.

Then they get brushed with a little bit of melted butter and we grill them on the hot side of the grill until we get gorgeous grill marks like these.

And then we transfer them to a roasting pan on the cooler side of the grill to cook through and become sweet and tender.

Once they are cool enough to handle, we can slip the skins right off with our hands.

How cool is that?

Then we cut the peaches into bite sized pieces and add them to a simple vinaigrette along with ripe tomatoes that we salted for about thirty minutes to remove excess liquid.

Now we just plate it up and top with burrata and chopped basil.

Well, this is definitely a looker.

The most satisfying part is breaking into the burrata and letting it mingle with the juicy peaches and tomatoes.

Let's try a bite.

Mmm.

Mm mm mm.

This is a pure taste of summer.

It's got tomatoes, grilled flavor, creamy cheese, fresh basil, and the real star of the whole show, sweet, sweet peaches.

This has like seven ingredients and tastes like an entire season.

You have to make it.

Now I've got one more recipe for you, and it puts peaches front and center in an absurdly good dessert.

This is Cook's Illustrated Deputy Food Editor, Andrew Aguirre's recipe for Peach Tarte Tatin.

Now I hear the purist saying Tarte Tatin is usually made with apples and the vibe is awful.

Well, the peach sub changes its whole character and you want to make it all summer long.

We'll start by smearing butter over the bottom of a ten inch oven safe skillet.

And then we're going to add half a cup of sugar and shake it to distribute it in an even layer.

We add a pinch of salt and arrange our peaches nicely on top.

We pop the skillet over high heat and cook without stirring until the juices and sugar start to brown and smell great.

This step draws out and concentrates peach juices and starts the process of myodization, where the protein in the butter and the sugar will react under heat to create rich flavor and aroma.

We top with a circle of all butter pie dough, brush the dough lightly with water, and then sprinkle with two tablespoons of sugar.

Then we bake until the crust is very well browned, which takes about thirty minutes.

Wow, just look at this beauty.

We'll transfer the skillet to a wire rack set in a roomed baking sheet and let it cool for about twenty minutes.

Now, if this were an apple tarte tatin, we would simply flip this over and serve.

But with peaches, we still have a lot of liquid left in the skillet.

Why?

Check out this experiment.

I microwaved a peach and an apple separately in measuring cups for the same amount of time.

Look at the difference in liquid in each.

Now, this would suggest that peaches contain a lot more liquid than apples, but that's actually not true.

Peaches do contain a bit more water, about eighty eight percent versus eighty four percent in apples.

But that's not why the peaches shed so much more juice during cooking.

It's because peaches have very little pectin, while apples have it in abundance.

When apples are cooked, they release water, but the pectin in their cell walls absorbs most of it instead of allowing it to leak out.

Because peaches have far less pectin, they release a ton of it right into the skillet.

But fear not, we've got a way to capture and concentrate that super flavorful juice.

We just drain it off and then reduce it down with a little bourbon.

Wow, this smells, wow.

Finally, we brush this incredible elixir over our gorgeous tart.

Well, would you look at that?

I've made myself a complete meal.

I'm gonna start with a few bites of this gorgeous tomato, peach, and burrata salad.

The acidity from the tomatoes and the sweetness from the peaches with that creamy burrata, unbelievable.

Okay, and now it's time for dessert.

Now, no shade to apples.

I love you, apples.

but this is the best tarte tatin I've ever had.

The peaches are gorgeously browned and the reduced juices are sticky and rich with peach flavor.

It's a dream.

So whether you're blurping in a blance over the sink or tucking into the salad or tarte tatin, this is undeniably how to eat peaches.

Peaches, come to the country.
